Freezer Cooking Friday: Easy to Stuff Manicotti



This is by far one of my favorite freezer cooking recipes of all time.  It looks like it would taste so-so right?  Well, not so so-so!  Seriously it tastes pretty darn good, and if you use a good tomato sauce it's AWESOME!  And hey, any cooking level can make it because all you do is follow the directions on your manicotti box, stuff, cover in tomato sauce and mozarella.  Freeze.  Take out of freezer and bake covered at 350 degrees until bubbly (mine usually take about 1 1/2 hours to be done :) and then if you want a browned top just take your alluminum foil off the last 10 minutes or so of cooking.  Easy!

Go HERE where All Recipes.com has a really good idea for making easy Manicotti :).  I always just leave out the ground beef since I prefer a "non-dirty" sauce, but do whatever your preferences deem you should do ;).  I also use a 1 lb block of mozzarella and it's usually perfect for my "cheese loving" family between the manicotti and the topping.

To freeze.  Just prepare the manicotti like I stated above, cover with plastic wrap and then with a layer of alluminum foil.  Label with a sharpie what you have and then I usually stick on the baking instructions too. 

To Prepare from Frozen:  Take off aluminum foil and remove plastic wrap.  Replace aluminum foil.  Bake at 350 degrees until bubbly (about 1 1/2 - 2 hours).  Remove foil and bake an additional 10 minutes to brown cheese.  Let sit another 10 minutes to set sauce and stuff and enjoy!
